Mango sandwiches, cut and ready-to-eat.

It is peak summer time in Mumbai right now, which means that it is mango season! I wanted to eat a new kind of a sandwich, and this is what I came up with. This sandwich contains mangoes and mint leaves and basil leaves. The mangoes give it a rich and sweet taste, while the herbs bring in a hint of freshness. It makes for a quick, easy, and tasty meal for the summer. I hope you try making this yourself and like it!

The following recipe makes one mango sandwich.

Ingredients

  • 2 slices of sliced multigrain bread
  • ½ mango
  • 8 mint leaves
  • 3 basil leaves
  • 2 teaspoons of butter (optional)
  • A pinch of red chilli powder (optional)

Directions

  1. Toast the bread slices, using butter if you like.
  2. Slice the mango into thin slices.
    Toasted bread, mint and basil leaves, and sliced mango laid out in a plate.
  3. Arrange 5 slices of mango along with the mint and basil leaves on the bread.

  4. Cover with another slice of bread and cut diagonally to obtain two triangular pieces.
  5. You may sprinkle red chilli powder on the remaining slices of mango to go along with your sandwich.
  6. Bon appétit !

Tips

  • I used Alphonso mangoes, but you may try out different varieties of mangoes.
  • You may use whole-wheat bread if multigrain bread is not available.
  • You may experiment with different herbs that you have at hand.
